This, along with Not Your Grandma's Green Bean Casserole, is one of two new dishes I made for our family's Thanksgiving dinner this year. It was definitely a hit and something I'll be making frequently in the future! After going over what everyone was bringing, I felt like we really needed a fresh side to go along with all the cooked sides. I didn't want to do an ordinary salad, so I decided to go with a broccoli salad. I read several recipes and then came up with my own combination of ingredients. I really wasn't exact with any of my measurements, so feel free to add whatever amounts suit you. This made a delicious, crunchy, colorful dish to add to the table! I wish I'd thought to take pictures, but things were a bit hectic that morning! Next time I make it I'll take pictures and add them. Here it is:
Ingredients
8 slice bacon, cooked & chopped/crumbled (cooked the way I always cook it...in the oven!)
2 heads fresh broccoli -- chopped
1 ½ cup sharp Cheddar cheese -- shredded
½ lg red onion -- chopped
a couple handfuls of grapes, sliced
a couple handfuls of almonds, chopped
¼ cup apple cider vinegar
⅛ cup white sugar
2 tsp ground black pepper
1 tsp salt
⅔ cup mayonnaise
In a large bowl, combine broccoli, cheese, bacon, onion, grapes, and almonds.
Prepare the dressing in a small bowl by whisking together the apple cider vinegar, sugar, pepper, salt, and mayonnaise. Combine dressing with salad. Cover, and refrigerate until ready to serve.
